Today I have a really delicious Mexican Zucchini Boats recipe for you, and even a fun story to go with! It’s like dinner and a show.

 

I remember when I made these because I acted like a complete fool earlier that morning. I apparently woke up at 1:30am in a panic because I thought it was actually 7:30am, which would have made me late for work. Not only did I start freaking out and running around like a crazy person because I think I’m late, I also wake my soon to be husband Edward. He has to share my complete moronic episodes with me, that’s what husband’s are for, right?

So here I am at 1:30am harassing Edward because he let me sleep in. *Face palm times ten*. Edward (and even our cat) were just looking at me like I was a total moron, and I can’t say I blame them. I was being a total moron. Thankfully after being together for 13+ years, Edward has gotten used to my crazy ways. Although, he did call me later that day to remind me how much of a freak I had been that morning.

 

A Perfect Plant-Based Meal!

Anyway, I decided to make these zucchini boats because I had had this idea for-e-ver and I figured I owed Edward a nice homemade dinner. This is a great meatless Monday dish for those of you looking for incorporate more plant based meals into your dinner rotation! 

Now the dietitian in me comes out. Why go Plant-Based? The health benefits of following a plant based diet are overwhelming. Meat consumption increases risk for all kinds of diseases like cardiovascular disease, type 2 diabetes, cancer, weight gain, inflammation, and it negatively impacts the environment. Just 1lb of beer requires 1800-2500 gallons of water. In contrast, 1lb of tofu requires only 220 gallons of water. In regards to health, red meat (especially processed red meat) increases risk for heart disease and stroke by 42%, up to 32% for type 2 diabetes, and 16% for cancer. Not only that but meat consumption is also linked to chronic inflammation and oxidative stress which, in turn, can lead to the development of Alzheimer’s.

Mexican Zucchini Boats

Ingredients

– 2 tbsp white onion
– 1/4 cup red pepper
– chipotle powder
– 1/2 cup cooked brown rice
– 1/2 cup corn
– 1/2 cup black beans
– 1/3 cup riced cauliflower (I used frozen)
– 1 large zucchini, sliced lengthwise
– cheese of choice (I used @daiyafoods mozzarella)
– diced avocado, for topping

Instructions

Preheat oven to 400 degrees F and spray a large baking dish.

Set aside.

Scoop out the insides of the zucchini (save the innards for later) and place the hollowed out zucchini in the baking dish.

In a large skillet heat onion, pepper, beans, zucchini innards, corn, and rice.

Mix in about a tsp of the chipotle powder.

Add more, to taste.

Heat mixture until all ingredients are well seasoned.

Spoon mixture into zucchini boats.

Top with cheese and bake for about 25 min.

Let cool then top with avocado and enjoy.
